ZUCCHINI OVERLOAD!!!

 

The garden has done wonderful this year. I have been working on tomatoes for days and thought today I would take a break from them and work on zucchini.

What do you do with all the zucchini? You have given away all that you can and frozen shredded zucchini for future use in bread or cut it up for stir fry. You find hidden ones the size of a caveman club.  

I have this wonderful cookbook that has about 5 pages of recipes to use zucchini. Some of the recipes are zucchini quiche, stuffed zucchini boats, zucchini with pasta, zucchini stew, zucchini meatloaf, zucchini lasagna, sausage zucchini stir fry, zucchini chicken rice casserole, zucchini potato patties.

 I haven't tried any of these but I have made zucchini potato patties. They are so good. even though I'm not a big fan of cooked vegetables.  

I am a huge fan of sweets so I have made zucchini bread and zucchini brownies

These brownies are a cake brownie. Here is the recipe

ZUCCHINI BROWNIES

3 eggs

1 c. sugar

1/2 c. vegetable oil

1 c. grated zucchini

1 tsp. vanilla

1 1/2 c. flour

1/4 c. cocoa

1 tsp.soda

1/4 tsp. salt

1/2 tsp. cinnamon

Beat eggs, sugar and oil. Add zucchini and vanilla. Combine and add remaining ingredients. Bake in a buttered 13x9 pan at 350 degrees for 20-30 minutes.

 

ok I am going to go eat my veggies now. Maybe even with a scoop of ice cream and chocolate sauce.
