11 DAYS UNTIL SPRING!!!
It is still too muddy to get the tractor to clean the barn. And I tended to my seedlings. So this week was dedicated to Sourdough bread. I have made many different kinds of bread but never have I been successful making sourdough bread. It has always turned out like a flat bread.
I made a starter from scratch and one from some dried starter I had bought. After a couple of days both were good and bubbly.
I kept feeding it every day and would stir it twice a day. I then made a sponge with 1 cup of the sourdough, 3 cups of flour, and 1 1/2 cup of lukewarm water. Covered with plastic wrap and sit at room temperature for 4 hours. After that the bowl went into the fridge for 12 hours.
After the 12 hours I added the sugar, salt and flour and kneaded until the dough is smooth and elastic. I started this in my Kitchenaide but it decided to give up the ghost, so I hand kneaded. Divided the dough into 2 equal parts and formed the loaves. Covered in plastic and let rise until nearly doubled. After it has doubled slash the top and brush egg wash on the loaves. Lightly give it a spray of water and bake.
I put some of the sourdough starter on parchment paper and let it dry. I can be used to start a new starter.
And what was the final result? Success!!!!!!!!
